Say hello to Mushroom Pesto — an (addictive!) unexpected shortcut to umami. Our pesto is made with over half a pound of Blue Oyster, Trumpet, and Shiitake mushrooms, simmered with roasted onion, garlic, and spices.

What is Mushroom Pesto?

"Pesto" is derived Genoese verb pestâ, which means to grind or crush down.

Our mushroom pesto uses a blend of our organic mushrooms that are ground and cooked down with roasted aromatics, balsamic vinegar for a touch of acid, and brightening spices in oil. We wanted to highlight the flavor of our mushrooms in a familiar format that delivers on all of that umami and mushroom flavor—without all the cooking.

Pesto is different from other sauces because it delivers such an intense flavor. Like traditional basil pesto, mushroom pesto can be used as a spread on sandwiches, stirred into pasta and noodles, whisked into sauces and dressings, or simmered in a pan sauce for meat, tofu, vegetables, and mushrooms.

  • Mushrooms

    Our blue oysters, trumpets and shiitake create a symphony of umami flavor. Meaty and chewy meets sweet and nutty meets umami bomb.

  • Sunflower

    Sunflower gives a unique flavor and texture while also ensuring that our pesto is allergen-free, so more mushroom heads can enjoy. Sunflower oil is also used for its high smoke point alongside sunflower butter, which adds nuttiness without the nuts!

  • Onions and Garlic

    Mushrooms and alliums are a match made in heaven. A classic pairing for a reason, we cook the onions and garlic down until fragrant, sweet, and caramelized.

Our mission has always been to get people to eat more mushrooms—in every way possible. We wanted to make it easier and faster, so we created something brand new that would also add value back to the world.

At Smallhold, we absolutely hate throwing stuff away. Especially mushrooms. As we grew our business we realized our mushroom trimmings pile growing super quickly. Thus, our dehydration program was activated.
